A one-day workshop for those that love dense, hearty breads. We’ll focus on the underappreciated rye, discussing its history, its uses and tendencies in sourdough baking, and its contrast from wheat. 2 sourdough loaves will be made in class: a dense rye pan loaf studded with nutritious sunflower and flax seeds, and a lighter rye hearth loaf. A proofing basket and lunch are included in the class price.
